… for me is a rather simple one, but it releases such sensations of sheer pleasure in the taste buds, this is why I will write a bit more extensively about it today.
Taken from a recipe book by Stefanie Reeb, we discovered this dish several years ago while being on holiday in our cabin in the woods. As the requirements with regard to kitchen equipment are really small, it is made for small kitchens especially.
Green asparagus in aromatic oil with (sweet) potato mash
Ingredients:
500g green asparagus, trimmed
1 garlic clove, minced
4 spring onions, chopped
lemon zest
Olive oil
800g sweet potatoes (works with normal potatoes as well)
50ml soy milk
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon olive oil
Preparation
Wash asparagus and place a in pan. Douse generously with olive oil, sprinkle with spring onions, garlic, lemon juice and lemon zest. Let marinate for some time,
Preheat the oven to 200 °C and put pan inside for 35 min.
In the meantime prepare the (sweet potato mash).
Peel and dice potatoes, cook for 20 mins or until soft. Mash potatoes with the other ingredients as above. Add salt and pepper to taste.
When the asparagus is ready, serve immediately. On the plate add some of the sauce to the potato mash and stir.
In my book this deserves 7 out of 5 stars and I could eat it every week :-*
